This is my mom’s classic recipe, particularly for Friday night Shabbat dinners. For all my vegan fans, this is the perfect, moistest cake ever!! Being deprived of a bundt pan at school this recipe made two loaves and a dozen muffins. The cake went to my friends and the muffins went to my bro Phil, to give him a little taste of home.

Recipe follows, emailed to me from my dearest madre:

Preheat oven to 325 degrees

2 cups sugar

1 cup canola oil

2 cups applesauce (one 24 once jar)

3 cups flour

1 teaspoon cinnamon

1/4 teaspoon ground cloves

2 teaspoons baking soda

1 teaspoon vanilla

1 cup raisins

Mix all together

Bake in greased bundt or tube pan for 1 hour and 15 minutes. Adjust time if different shape pan. Also great as muffins.
